Combining wood fired pizzas and pub grub classics The Old Inn at Holt is certainly a crowd pleaser. We caught up with Head Chef, Josh Garrett, to find out more

Set in the pretty village of Holt, near Wimborne Minster, The Old Inn has recently had a stylishly refurbishment featuring dark woods, teal accents, rustic furnishings and a brand new zinc bar. The philosophy behind the newly renovated pub is to bring a dash of London style to the Dorset countryside. Its seasonally inspired menu of locally sourced ingredients, features popular pub classics alongside a range of freshly cooked pizza from its wood fired oven as Head Chef, Josh Garrett reveals.

Who sparked your interest in cooking?

My mum! She was always cooking delicious homemade Italian dishes from scratch with lots of fresh herbs and spices. I was always willing to help her. That really inspired me to train as a chef.

Is there a chef you admired?

Gordon Ramsay. I have so many of his books and I find his way of cooking really interesting.

What is the inspiration behind the menus at The Old Inn?

Fresh seasonal local produce is at its heart and also inspires our specials too. Essentially our menu features classic pub dishes, ranging from Dorset ham, egg and chips or the Dorset Red Meat Burger in a brioche bap through to steaks, roasts and Thai curries.

What vegetarian dishes do you offer?

We’ve got some really interesting vegetarian dishes like goats cheese and apricot nut roast served with our homemade vegetable gravy, and there’s a new spicy bean burger coming to our main menu.

What signature dish are you most proud of?

It has to be our classic steak and kidney pie with its buttery short crust pastry and rich meaty filling; in summer dressed Dorset crab or locally caught sea bass always fly off the menu.

What has proved to be a big hit with your customers?

We’ve recently had a wood fired pizza oven installed, and our homemade pizzas have really taken off. You can sit outside on The Pizza Terrace and tuck into pizzas fresh from the oven – its been a massive hit with the locals.

What would be your ideal supper?

A Sunday roast with all the trimmings shared with my family. There is something very special about sharing a meal with your family and being together for Sunday dinner.
